A Micro Farm Growing Produce On the Western Slope of Colorado

Brooks Elliott is the owner of a biodynamic farm and ranch nestled in a small valley surrounding the town of New Castle, Colorado. His passion for fresh, local food was the primary reason behind the establishment of Clinetop Farm. C.F. grows artisan plant varietals in a custom formulated blend of soil; that is consciously irrigated with clean mountain water. This equation allows the operation to generate produce that has distinguishing flavors and superior aromatics. The ranch’s goal is to ultimately help clients bring something special to the plate by offering unique, farm-fresh ingredients.

Clinetop Farm uses organically derived techniques to cultivate an array of specialty items for Roaring Fork and Vail Valley restaurants. The smaller-scale farm allows for meticulous attention to detail, which is essential to offering chefs a standout product.

Responsible Colorado farming requires sustainable horticulture practices as well as resource conservation. At C.F. the utilization of efficient watering systems are incorporated to prevent unnecessary dissipation and overuse. The farm also employs a multitude of soil sequestration practices to help reduce the amount of carbon in the atmosphere. All of the amendments used for production are locally sourced or originate here on the property to ensure consistent quality control.
